In 2003 our company started its production activity of pre-cooked and frozen pizza and focaccia bases. Our main purpose was to create a high-quality semi-finished product for professional use and easy to cook. Our dough is prepared by using the indirect method of “biga”, which consists of a pre-dough that levitates for 24 hours. Successively we prepare the final dough, which levitates for 4/6 hours, before the final roll out. This long and accurate process allows the final product to be highly digestible, fragrant and chewed in less time. Furthermore, since our standard dough contains 75% of water and our whole dough is 85% hydrated, the finalized product does not dry out and has a longer life on the shelf. The dough is flattened and finished by hand. Then, it is precooked directly on refractory stone at a temperature of +400 °C. Right after this process, it is put inside a freezer at a temperature of -40 °C (abatement process) in order to avoid macro ice-crystal formation, which allows the product to remain fresh as it was initially precooked. Our product is then preserved at a temperature of -18 °C and has a 12 months shelf life. Since our product contains neither animal fats nor dairy products, it is perfectly suitable for both vegetarian or vegan diet. Furthermore, we utilize semi-whole flours in our dough (type 2 and type 0), which are rich in fibers and mineral salts. In 2016, we have been certified as “Organic” by ICEA. In terms of food safety, in 2017, we have also obtained BRC and IFS certifications by CERTIQUALITY. Our production activity of pizza and focaccia bases is based on a handcrafted method and has a great productive potential. It takes place in a 2.000 m2 area. Currently we are producing 8.000 kilos (25.000 pieces) per day. Our product is conceived only for professional use and is suitable for any kind of store such as pizzerias, focaccerias, sandwich shops, bars, pubs, sandwich shops, restaurants and also bakeries inside supermarkets.
